Ogachino, surrounded by mountains on all sides, has little sunshine and snow falls early, making it impossible to adequately dry autumn radishes in the sun for pickling. Therefore, the "smoked pickles" method has been passed down through generations, in which the radishes are hung from beams indoors and dried using the heat and smoke from a hearth fire before being pickled.
Smoking and drying the food over a hearth fire enhances its flavor and preservation, and pickling it in the low temperatures of early winter allows it to survive the long, snowy winters of this region.
This smoked pickled vegetable was made in almost every household in Ogachino until wood-burning stoves became widespread in the 1950s, and its origins are said to date back to the Muromachi period. It was an indispensable staple food during the winter months, supporting people's health, and was an essential part of social gatherings, enjoyed as a snack with sake or tea.
In this region, when people refer to pickled daikon radish (degozuge), they are talking about this smoked pickled radish, which was a very common food from winter to spring.

"Ogachino Kimura-ya" has been making pickles in Yuzawa City, Akita Prefecture since 1963.
Our flagship product is "Iburigakko," a type of pickled vegetable that is representative of Akita Prefecture.
Iburigakko is a traditional pickled vegetable originally made by farmers in Akita Prefecture, where daikon radish was smoked over a hearth and preserved as a food.
At Ogachino Kimura-ya, they still smoke each individual radish during preparation, cherishing the traditional methods.
Made with domestically produced white-necked radishes from the Tohoku region.
What is used for iburigakko?White-necked radish specifically for smoked pickled radish (iburigakko)。
We source daikon radishes from Tohoku region from contracted farmers, and by completing the process from receiving the radishes to pickling them in a short period of time, we are able to preserve the flavor of the ingredients. In introductions to fermentation tourism in Akita Prefecture, it is also mentioned that we use daikon radishes from Tohoku for our iburigakko (smoked pickled radish).
The standard "Iburigakko" currently sold also clearly states that the raw material origin is "domestically produced (radish)".
Smoking with firewood, a traditional method.
The harvested radishes are smoked over 3-4 days using hardwood firewood.
By hanging each radish individually and smoking them while carefully monitoring the heat, the moisture is removed, and the characteristic smoky aroma of iburigakko (smoked pickled radish) is created.
During peak season, they handle approximately 10,000 radishes a day, and the process of weaving and smoking each one by hand is extremely time-consuming.
Afterward, the food is pickled in a pickling bed primarily made of rice bran, salt, and sugar, and allowed to mature slowly through natural lactic acid fermentation.

In addition to iburigakko (smoked pickled radish), we also manufacture soy sauce-pickled and miso-pickled mountain vegetables from Akita, as well as furikake (rice seasoning) and dashi (broth) that utilize the flavor of iburigakko.
