Our products are manufactured by fusing pure tin onto a pure copper plate.

We have been making copper pots and pans for nearly 100 years, spanning four generations of our family, in Adachi Ward, a downtown area of Tokyo.

I strive to create copper cookware so that people can fully appreciate the qualities of copper as a material.
Typical hot pots include,
Tamagoyaki pot, oyakonabe (chicken and egg hot pot), yukihira pot, stepped pot, stockpot, half stockpot, stew pot, yosenabe (mixed hot pot), tempura pot, frying pan, etc.

Copper pots from Nakamura Copperware Manufacturing are favored by top-class restaurants and sushi chefs throughout Japan.
Copper is an excellent material for cooking utensils due to its superior heat conductivity and heat retention.
Because the heat is distributed evenly and without unevenness, uneven cooking and burning are less likely to occur.
If you compare it to iron, stainless steel, or silverstone pots, the difference will be obvious.
Some people choose copper pots because they believe it makes the flavor milder.
Because cooking is done using residual heat stored in the copper plate, eggs become fluffy and meat turns out juicy without losing its juices.

A major characteristic of Nakamura Copperware Manufacturing is,A unique finish where pure tin is "baked" onto a copper plate.。

Unlike typical tin plating, this product uses a high-purity copper plate onto which the tin is baked. The official instruction manual also states that each egg pan is tinned by hand.

Copper has high thermal conductivity, meaning heat is easily distributed throughout the entire pan. Therefore, by adjusting the heat while using it, you can achieve a fluffy texture when cooking dishes like omelets.

Nakamura Copperware Manufacturing is famous for its egg roll pans! Their official website has detailed information on how to use their copper pans and how to repair the wooden handles, so be sure to check it out! ☝

It appears to turn black due to repeated complex chemical reactions with minerals in water (such as calcium and copper). Aluminum pots also blacken when using highly alkaline ingredients or seasonings. For example, they will blacken when cooking with konjac or pickled plums, boiling eggs, or using salt and soy sauce. This blackening is harmless to the human body, so there is no problem leaving it as is. When exposed aluminum reacts with moisture, it forms aluminum hydroxide, which then chemically reacts with minerals in the water (in this case, calcium from the egg), causing it to turn black. Aluminum hydroxide is harmless to the body, so there is no problem leaving it as is. As a preventative measure, you can wash it thoroughly with a cleanser, and after a while, an oxide film will form again in the air. However, if you use it before that happens, the blackening reaction will occur again. After removing the blackening from the aluminum pot, do not leave it as is; boil rice water or vegetable scraps in it for 10 to 15 minutes. This will form a film similar to anodized aluminum. Reference Life Hacks [How to clean a blackened aluminum pot] ① Slice a lemon and rub it well on the blackened parts of the aluminum pot. ② Put apple peels and cores in the aluminum pot with water and boil for about 15 minutes (lemon is also OK). ③ Put the syrup from a can of mandarin oranges into the aluminum pot and boil for about 15 minutes (diluting with water is OK). ④ Put citric acid and water into the aluminum pot and boil, then simmer over medium heat for another 10-20 minutes. The reason why the blackening comes off with the above method is largely due to "citric acid". The "aluminum hydroxide film" that is the source of the blackening undergoes a chemical reaction and dissolves when it comes into contact with citric acid. Now, let's remove the black stains with citric acid. Add about 2 teaspoons of citric acid and bring to a boil. Although I forgot to do this this time, if you rub the sides with a paper towel while it is boiling, you can remove the black stains all the way to the rim of the pot. After that, wash with a soft sponge and neutral detergent. However, even with this, it may not come off completely. In that case, please remove it patiently with a cleanser or steel wool. I would definitely like to try it. I think commercially available tamagoyaki (Japanese rolled omelet) is too strongly flavored, so I recommend making your own tamagoyaki at home using a tamagoyaki pan.Tamagoyaki Pan Instruction ManualThank you for purchasing our copper tamagoyaki pan. This product is made from high-purity copper plates that are individually tinned (tin-plated) by hand.We hope you will enjoy using it for many years to come as a companion to your cooking.Precautions for use1.Never heat the pan empty. (This will cause the tin to melt.)2.Copper has very high thermal conductivity, so please adjust the heat to a low level (medium heat or below).3.Do not use scouring pads, cleansers, or metal utensils on the inside (silver-colored part/tin).4.Do not use the pan if the nail in the handle is missing. Please drive the nail back into the loose wooden handle.5.When the handle is hot, please use oven mitts or similar. 6. Leaving food in the pot for extended periods can cause rust, so transfer food to another container immediately after cooking. [Before first use] Wash with a sponge and dish soap, rinse thoroughly with water, and dry completely. Then, fill the pot about halfway with oil and heat it over low heat for 4-5 minutes, gently scrubbing the inside of the pot with a paper towel or similar. (Be careful not to take your eyes off the pot to prevent the oil from catching fire.) This will allow the oil to season the pot and prevent sticking. Impurities may float to the surface of the oil after cooking, so discard it only after it has completely cooled. *When using for the first time, try frying eggs with plenty of oil and without any broth. [How to care for the main body] 1. Once the pot has cooled, remove any egg residue from the inside with a paper towel or similar, and lightly coat with oil before storing. *This will allow the oil to season the pot, making it even less likely to burn and easier to use. 1. If you are concerned about oil, or if you will not be using the pan for a while, wash it lightly with a sponge and season it with oil before the next use. 2. Wash the outside with a sponge using dish soap, etc. 3. If food is burnt on, put water in the pan, heat it, bring it to a boil, wash it with a sponge, and then boil it in oil as you would when using it for the first time. Do not scrub with a scouring pad, cleanser, metal fittings, etc. This will cause scratches and make that area more prone to burning. 4. If you will not be using the pan for a long period of time, you can extend its lifespan by applying oil and then covering the inside with kitchen paper, etc. 5. Do not use a dishwasher. [Regarding loosening of the handle (wooden handle)] The wooden handle is hammered in firmly at the time of shipment, but due to its structure, it may loosen due to shaking during delivery, vibrations during cooking, drying of the wooden handle, etc. In this case, hold the base of the handle (metal part) with one hand and hammer in the end of the wooden handle and the nail with a hammer or mallet. *Since each item is handmade, there may be some color unevenness on the inside due to temperature differences during manufacturing, but this will not affect its use. *As the oil soaks in, the tin (silver part) on the inside may change color, but this will not affect its use. Loosening due to drying may occur again with use, but please re-tighten it using the method described at the bottom of the instruction manual that came with the product. How to repair the wooden handle * (1) Hold the wooden handle and tap it in with a wooden mallet or hammer. * (2) Drive in the nail in the nail hole. img_20171208-101825.jpg (1) img_20171208-101852.jpg (2) If the wooden handle has become scorched and loose, we recommend replacing it. There is a charge for this service, so please contact us via our inquiry form to let us know that you would like to purchase a replacement. The price for a wooden handle is ¥590. (Including mounting nails) Due to the increase in postage rates from October 1st, we will send it by regular mail for ¥180. Please send ¥770 worth (seven ¥110 stamps). Alternatively, we will guide you on how to pay by bank transfer.Regarding our pure copper products There are people spreading false rumors about our products on some websites, so we have posted this to alleviate any concerns for those considering purchasing our products. Our products are made by baking pure tin onto a pure copper plate.img_20220509-014318.jpg Using a pure copper plate img_20220509-014520.jpg img_20220509-015047.jpg Each piece of tin is spread with pure cotton and baked on.img_20220509-015234.jpg In some cases, tin may adhere to the outside during the baking process. img_20220509-015353.jpg When the copper plate is heated, the copper plate will change color. The change in color of the copper plate as you use it is proof that it is a pure copper product. The change in the pattern of the flame on the pot is also one of the pleasures. This is Keiichi Nakamura from Nakamura Copperware Manufacturing. Image Thank you for visiting our website. We hope you will take your time to look around. We have been making copper pots for nearly 100 years, for four generations of our family, in Adachi Ward, downtown Tokyo. Image img_20190905-080759.png We strive to make copper pots so that people can fully understand the goodness of copper as a material. Our representative pots include egg pans, chicken and egg pans, yukihira pans, stepped pans, stockpots, half stockpots, stew pots, yosenabe, tempura pots, frying pans, etc. Nakamura Copperware Manufacturing's copper pots are used by professionals such as top-class restaurants and sushi chefs all over Japan. Copper is excellent for cooking utensils due to its superior heat conductivity and heat retention. Because heat is distributed evenly without unevenness, uneven cooking and burning are less likely to occur. "If you compare it with iron, stainless steel, or silverstone pots, the difference is obvious. Some people choose copper pots because they make the flavor milder. Because you can cook using the residual heat stored in the copper plate, eggs become fluffy and meat turns out juicy without losing its juices. The head chef of a certain high-class restaurant said, "We use Nakamura Copperware pots because, as professionals, we use them to serve dishes that showcase our craftsmanship, so it's natural, but housewives also cook as part of their daily household chores, so they are just as much like professionals! If you use Nakamura Copperware pots, you should be able to serve even milder and more delicious home-cooked meals." Another feature of our copper pots is that the tin is baked on, rather than tin-plated. The tin baking suppresses the high temperature of the pot caused by the heat conductivity of copper. The controlled heat allows the entire pot to reach a suitable temperature, resulting in more delicious dishes. img_20140218-190802.jpg img_20140218-191946.jpg img_20140218-190829.jpg img_20140218-191010.jpg Our products are available on Amazon and Rakuten through wholesalers, but sales are also made through individual retailers and shops via wholesalers. Introduction in English Introduction in English The tamagoyaki pan produces tamagoyaki that is as soft and fluffy as a pancake, like never before. Nakamura Copperware Manufacturing Co., Ltd. makes the highest quality tamagoyaki pans. The tamagoyaki pan is essential for making tamagoyaki in the perfect shape. This is why high-end sushi restaurants and Japanese restaurants use tamagoyaki pans. The pan is made of copper. This is because tamagoyaki is made over low heat. Copper conducts heat well and distributes it evenly, so it does not overcook or cook unevenly. Therefore, the omelet becomes soft. The inside of the omelet pan is made of multiple layers of tin to prevent oxidation. Nakamura Copperware Manufacturing's omelet pan is different from others. Because multiple layers of tin are baked on and layered, it retains its quality no matter how many years you use it. This omelet pan can be used not only for omelets, but also for making pancakes and other dishes.
