So, we would like to introduce dried potatoes to everyone so that you can learn about them and enjoy them. Tamayutaka Tamayutaka The raw potatoes are resistant to cold and heat and are white or light pink. It has been a representative taste that has been loved in Ibaraki for a long time. Generally, when people say dried potato, they are referring to this variety. It is characterized by its refreshing sweetness and has enduring popularity. Tamayutaka Dried Potatoes Beni Haruka The name Beni Haruka comes from the fact that it is "far superior". The yield is the same as or slightly more than Tamayutaka, and it is popular because of its high sugar content, so the number of producers is increasing. It is very sticky and is characterized by its beautiful yellow appearance and strong sweetness. Beni Haruka Dried Sweet Potatoes Izumi Izumi is a rare variety of sweet potato that tends to grow smaller, with a yield of only about 80% of Tamayutaka. When processing dried sweet potatoes, the thick skin makes peeling difficult and requires skilled techniques. It has a high sugar content and a unique richness, and the dried sweet potatoes turn a deep yellow and amber color. Izumi Dried Sweet Potatoes Hoshikogane Hoshikogane has a yield similar to Tamayutaka, and is a well-shaped variety with reddish-purple skin and pale yellow flesh. On the other hand, it is sensitive to cold and difficult to store for long periods during the winter. It is characterized by a refined sweetness that is not cloying. Hoshikogane Dried Sweet Potatoes Silk Sweet Silk Sweet is a variety that has recently become very popular for baked sweet potatoes and other uses. The skin is a vibrant reddish-brown color, and it is characterized by having fewer sprouts than Beni Haruka and a smooth surface. You can enjoy a refreshing taste and a smooth texture. Hoshikirari Hoshikirari is a variety of dried sweet potato developed specifically for this purpose. It has a higher yield than Izumi and a brighter color inside than Tamayutaka. While it is easy to store, temperature control for the seedlings is difficult, and currently there are few producers. It has a clean aftertaste, making it easy to eat. How to make Hoshikirari dried sweet potatoes STEP 01 Digging up sweet potatoes Harvesting sweet potatoes that have been carefully cultivated from April to October.
